Paul Bar has a new chef who has brought some tasty additions to the menu

Paul Bar, one of the best spots to grab an adult beverage and a bite in Palm Springs, has added Lexy Smith as Executive Chef and she has added a few new (and tasty!) options to the menu.

Smith has been in the kitchen for about a month now and has brought new food dishes to  Paul Bar including a bone-in pork chop, kale, and butternut squash – served with a chutney made with dates that come from local Coachella Valley trees.

There’s also calamari steak rings served with a spicy marina –  made in house (as all sauces are) –  and a bison short rib dip – served on sourdough with fontina cheese, caramelized onions, au jus, and served with a side salad.

In addition to the new menu items served everyday, Paul Bar is serving up meatloaf and mashed potatoes on Mondays.

Cactus Hugs was invited out to try the meatloaf and, yeah, Mondays don’t suck quite as bad anymore as it’s really good.

Thursdays, the bar is serving up a pot roast made from an 8 ounce Hanger steak and, don’t worry, they still serve up that super-good chicken schnitzel – that Paul tells us is made from a handed down family recipe.

And you might want to save a little room for dessert – all of which are made daily by Paul himself.

And yeah, you can enjoy all of it with one of the many cocktails at Paul Bar – including the CosmoPaul – which you can grab for just eight bucks during Happy Hour.

Or you can opt for my fave, the Frozen Sidecar – which Paul describes as “an adult Slurpee.”

Just be sure to leave a little of the frozen cocktail for me.
